My Favourite Apple Cake Recipe

This deliciously moist apple cake combines the sweetness of seasonal fruit with warming cinnamon and spice. It can be enjoyed either on its own with coffee or as a warmed dessert with a generous scoop of luxury vanilla ice cream and a dash of salted caramel sauce.

The Ingredients

500g apples (We used Coxes but Bramleys, Granny Smiths and Russets are also good. Each will vary in texture and sweetness)

1 tablespoon sugar

1 teaspoon cinnamon

1 teaspoon mixed spice

a good splash of lemon juice

2 large free range eggs

4oz light brown sugar

castor sugar and Icing sugar for sprinkling and dusting

2oz sunflower oil

2oz soft butter

4oz self raising flour

1 teaspoon  of vanilla extract

 

And the how to do it bit...

Preheat oven to 160ºC.

Grease and line an 8 inch square cake tin with baking parchment.

 

Peel, core and chop the apples into small cubes.

 

Toss the apple with the cinnamon, spice, sugar and lemon juice and set aside.

 

Then cream together the sugar, butter, vanilla extract and oil until pale and light in colour.

 

Add in the eggs then sift and fold in the flour.

 

Pour half  the cake batter into the cake tin and spread it out evenly.  Scatter half the apple mixture evenly on top.

 

Pour on the remaining batter and spread it out evenly .

 

Scatter the remaining apple on top and sprinkle with 1 tablespoon of caster sugar.

 

Bake for 30 – 35 minutes or until the sponge is golden brown, springs back when touched and the apple feels soft. Allow the cake to cool in the tin.

 

Sprinkle with a dusting of icing sugar before serving.
